Taylor’s Table Episode 5 & 6 – Pasta Bake/Quesadilla

So let’s jump right into the pot with this week’s episodes. Tuesday, February 16th, I talked about a Chicken Pasta Bake I made which turned out absolutely fabulous! Unfortunately, my phone was dead so I wasn’t able to catch a photo, however, I will definitely snag one next time!

Here are the ingredients I used, feel free to use whatever you have on hand! P.S. that’s kitchen slang for “whatever you have in your pantry or fridge”.

  • 1 box of Penne Pasta
  • 2 tablespoons of cream cheese (I used 1/3rd of the fat)
  • 1 cup of shredded cheese (I used soft white)
  • 1 tablespoon of Kerrygold butter (or margarine)
  • 10 ounces of Rotisserie Chicken (or shredded/chopped)
  • 1/2 bag of Spinach
  • 1 white onion
  • 5 cloves of garlic
  • 1 cup of heavy whipping cream

Step 1: Cook pasta to al dente according to package

Step 2: Shred and set aside chicken; chop white onion and peel/mince garlic

Step 3: Set a deep pan on the stove on medium heat (7/8) and add butter, onion, garlic into pan and sauté (careful not to burn the garlic)

Step 4: Cube cream cheese and add to pan along with the heavy whipping cream (or heavy cream)

Step 5: Bring to a low boil and then reduce heat, stirring often, once the sauce begins to thicken, add remaining cheese and continue to stir until cream cheese is full melted

Step 6: Add spinach, chicken, and add seasonings you would like (salt, pepper, Italian seasoning, garlic powder) and toss until everything is coated

Step 7: Preheat oven to 375 degrees and line a baking dish with butter/spray oil

Step 8: Layer bottom of the pan with pasta then add a layer of cheese, and add the rest of the pasta & top with cheese

Step 9: Bake for 20-30minutes or until golden brown

Step 10: Remove from oven and wait 5 minutes, plate and garnish with parsley or more cheese

I hope you enjoy this recipe! Feel free to add different veggies like maybe bell pepper, kale, or caramelized onions instead of regular. You can also switch out chicken for ground turkey, ground beef, ground chicken or even cut up sausages. Get creative & share your recipes with me!

For my next recipe is a staple at my household and that’s a Quesadilla.

The ingredients are a little more simple & a lot easier to add/change stuff depending on what you have.

  • 1 Large Flour Tortilla
  • Choice of cheese (1 slice of American/ or 1/4 cup of shredded)
  • Choice of Meat – 4oz of Chicken, Ground Turkey, Pulled Pork, Steak, etc
  • Choice of veggies (onions, green peppers, spinach, kale, etc)
  • Spray oil

You’ll want to use a non-stick flat pan for this.

Step 1: Assemble your ingredients

Step 2: Set flat pan on stove top on medium heat

Step 3: Take a tortilla and fill it with your choice of meat and veggies

Step 4: Top with cheese and fold in half, long ways

Step 5: Spray pan and place tortilla filled with ingredients on the pan

Step 6: Cook under golden brown on both sides

Step 7: Remove from heat, cut into 3rds and top with whatever you’d like (sour cream, crema, cilantro, cojita cheese, etc).
